Oven-Roasted Vegetables

With the mustard-roasted fish I made yesterday, I also made Oven-Roasted Vegetables. Since Josh does not like green beans, I left them out. Overall, it was good - except some of the asparagus was overcooked. Next time I'll add them in a few minutes later in the roasting time.

Mustard-Roasted Fish

Yesterday, I made Mustard-Roasted Fish from the Barefoot Contessa Back to Basics cookbook for Josh. The fish was good - I really liked the mustard, but it turns out Josh doesn't like creme fraiche. Who knew?

Weekend Score: Ben 1, Mommy 0

This weekend, Ben has been through so many outfits. Since he was hot with long sleeved outfits and kept on messing outfits up - he finally won!

Since it is January and Texas, the temperature quickly changed - and so Ben got a thicker onesie on prior to tummy time. Each time that I place him on his stomach, he gets frustrated with the small amount of movement - guess he'll be crawling as soon as he physically can!

Even though he is not crawling, he's rarely in the same position when I turn around for just a second!

Pasta with Mushrooms

This year, Josh got me Mark Bittman's How to Cook Everything cookbook. The amount of content is overwhelming - I've been looking through it since Christmas Eve!

The first dish I tried was his Pasta with Mushrooms recipe. Given my recent obsession with mushrooms, I liked it - very simple and hearty. Josh thought it needed something more. It was somewhat similar to Spicy Baked Macaroni I made last year.

Turkey-Artichoke Pasta with Tomato Sauce

Since HEB was out of mushrooms the other day, Josh picked up the groceries for his favorite meal, a variation on Giada de Laurentiis' Fusilli with Sausage, Artichokes, and Sun-Dried Tomatoes. The primary difference is that we use lean ground turkey.

This time, however, the sun-dried tomato jar was moldy so we had to improvise. Tomato sauce substituted for the sun-dried tomatoes. Next time (if this happens again), we'll use tomato paste. Given the setback, it was still great!

With dinner, we had a New Zealand wine - Nobilo Regional Collection: Marlborough Sauvingnon Blanc 2007. It was a good white wine (especially considering it was only about $10!) - Josh finished the bottle!

Happy New Year (and Mobile Baby!)!

Ben's Aunt Alicia spent some time with us on New Years Eve and New Years Day before she heads off to London this weekend. They had fun together!

Ben also spent some time with Perry. Josh and I still don't think the dogs realize Ben is a human!

I had missed Ben rolling over a few days ago on Josh's birthday. This morning, however, I was the only one around when he rolled over back to stomach, then stomach to back - 360 degrees!

Banana Muffins with Mascarpone Cream Frosting

My sister Alicia made yummy Banana Muffins with Mascarpone Cream Frosting (a recipe by Giada de Laurentiis) for us yesterday! I love them with the frosting (mascarpone is sooo yummy), but Josh prefers them without. Thanks again Alicia!
