Tonight I was looking for a dinner that would meet three objectives:
1. Use up items in our pantry
2. Be filling (an uncooked burger at a restaurant this afternoon - yuck! - meant I had not eaten a full meal all day)
3. Be fast (Ben behaved well during our trips out today, but is quite cranky tonight)
Using the following ingredients, I put together something that even Josh liked (he's never a fan of casseroles, but does usually like them once he tastes them). It's based off of a recipe that my mother-in-law made for us during Ben's first week.
"Cleaning Out the Pantry" Casserole
Ingredients
- Half of a rotisserie chicken (meat only, cut into smaller pieces)
- One can of cream of chicken
- Sour Cream (About 2-3 tablespoons)
- Cheddar Cheese (1 handful)
- Italian Seasoning
- 8 oz. of Dried Linguine Pasta
- Salt
- Pepper
- Garlic (Approx. 2 cloves, minced)
- Onion Powder
- 1 package of frozen mixed vegetables
- Panko (Japanese bread crumbs)
- Cooking Spray
- Preheat the oven to 350 degrees Fahrenheit.
- Cook the pasta and prepare the frozen mixed vegetables per the package instructions.
- Add the chicken, cream of chicken, sour cream, pasta, garlic, seasonings and vegetables into a casserole dish. Combine ingredients.
- Spread a thin layer of Panko on top, followed by a light dash of cooking spray for a crispy top.
- Bake for 20 minutes.
