Three-Cheese Chicken Penne Florentine


The only new recipe I made during this week was Three-Cheese Chicken Penne Florentine from Cooking Light. We added panko with cheddar cheese to make a nice, crusty topping. We also used ricotta in place of cottage cheese to eliminate the need for making our food processor dirty!

This makes great leftovers. Josh thinks it is very similar to Chicken Tetrazzini, only with more veggies. Given the choice, I'll make this from now on instead!
