Cookies'n'Cream Orange Truffles


I love Oreos, but cannot eat them while nursing Ben due to his reaction.

I figured that since I can now eat beans and broccoli without causing him to stay up all night screaming, maybe I could eat Oreos too.

Ha!

I combined about 8 crushed Oreos, a couple tablespoons of mascarpone cheese, orange zest and a tablespoon of orange juice together. I then rolled the mixture into balls, which were placed on parchment paper.

Once the mixture cooled in the refrigerator for a little while, I dipped each ball in melted semisweet chocolate, then placed them on parchment paper.

The balls cooled in the refrigerator and, later that day, were ready to be eaten.

Ben's diaper rash began to appear after I had one, so Josh got to enjoy them over the next few days.

I really don't mind not being able to eat Oreos most of the time, but when these were in the refrigerator, it was a little frustrating!

Clearly I'm not a food photography expert, but I could not get a clear photo of these truffles. Maybe next time.
